건강하고 활동적인 생활을 추구하는 고령자 전용 편의식품 개발을 위한 요구도 조사

초록

This study assessed the elderly’s demand for home meal replacement development through quantitative questionnaires and a personal interview. One-hundred ninety elderly people (65∼85 years old; males: 66, females: 124) were recruited in a local welfare center. The questionnaires included the general subjects, health status (teeth condition, chewing, and swallowing abilities, etc.) and dietary patterns. To collect detail information in regard to the demand, a qualitative in-person interview was also conducted. As a result, 79% of the respondents had chronic diseases, and 59.7% had cardiovascular problems. Considering the preference in a daily meal, 45.8% of the subjects strongly preferred “Kuk (Tang)” and demanded “easily swallowable Kuk (Tang)” as an elderly home meal replacement (HMR). In addition, elderly people with full dentures had difficulties in masticating and swallowing. Clearly, dental health was related to biting, chewing, and swallowing. In addition, the personal interview with each elderly respondent gave more specified information. The elderly strongly recommended the development of a health-promoting and easily chewable-swallowable-digestible meal as well as an easy-to-tear pack, easy-to-read labels, and easy-to-cook product for HMR.
